Crust:
1C walnuts
2C pitted dates soaked
Place dates and nuts in a food processor and blend until smooth
Filling:
3 cups blueberries [fresh or frozen]
1 1/2 cups macadamia nuts
1/2 cup pure maple syrup
2 tablespoons lemon juice
2 teaspoons ground cardamom or to taste
1/2 teaspoon pure vanilla extract
Pinch of salt
3-4 tablespoons melted coconut cream
Place all ingredients in a food processor and blend until smooth
Spread crust into a pie dish or spring form cake tin
Layer filling mix over crust
Place in fridge or freezer to set
Decorate with fresh blueberries, or seasonal fruit of choice and edible flowers
NB: This is not a low fat recipe
Crust variations: Macadamia nuts & dried apricots, Pecan nuts & dried pineapple, Walnuts & raisons, Almonds & dried figs. Add cacao nibs &/or powder.
